Digging the dirt

The Resurrection of the Albariza Dust

They call them Insensatos—the madmen. But in the sun-bleached, undulating hills of the Sierra de Montilla, sanity is a boring luxury. For decades, this region was the ‘forgotten cellar’ of Andalusia, a place of bulk cooperatives and dusty sweet wines. Terroir Comando hasn’t come here to follow the rules; we’ve come to reclaim the White Gold.

We are moving away from the industrialization of the solera and back to the pago (parcel). This isn’t about the hand of the cellar-master masking the wine with wood; it’s about the brutal, naked honesty of the Pedro Ximénez grape fermenting in tinaja. We are deconstructing the paradigm. Forget what you think you know about high-alcohol sherries. We are chasing the saline pulse of the earth, the tension of the vino de pasto, and the sheer audacity of six friends who decided that the best way to predict the future of Montilla was to invent it.

02 — TECHNICAL REPORT

Geometry of the chalk: the 15% miracle

THE SOIL MECHANICS

The Albariza is a geological marvel. Composed of up to 40% calcium carbonate, these soils are fossilised sea beds. The Levante wind bakes the earth into a hard white crust—a seal preventing evaporation while the subsoil stays cool at 45°C.

THE CONCENTRATION

Pedro Ximénez in the Sierra reaches 15% natural potential alcohol without effort. No fortification needed. These are vins de terroir in their purest state.

THE MICRO-CLIMATE

The Sierra de Montilla (300–600m) provides a vital diurnal shift of 15–20°C. Cooler nights preserve the malic acid—the ‘spine’ that keeps the wine from being flabby despite the southern heat.

THE VESSEL: THE TINAJA

These 6,000-litre concrete amphorae offer thermal inertia and controlled porosity. A micro-oxygenation develops a thin, elegant velo de flor—adding acetaldehyde (green apple, toasted nuts) without stripping the wine’s soul. Not a trend. An act of archaeology.

Los Insensatos is a project born from six friends who refused to let the identity of the Sierra de Montilla disappear into the industrial vats of giant cooperatives. They are pioneers of the Vino de Pasto movement—wines that celebrate the biological aging of the velo de flor without the heavy hand of fortification. By working at altitudes between 400 and 600 metres in the Pagos of the Sierra, they capture a freshness that many thought impossible in the heat of Córdoba.

 


 

Their weapon of choice? The Tinaja. While the rest of the world obsessed over French oak, Los Insensatos returned to 6,000-litre concrete amphorae—letting Pedro Ximénez speak clearly, vibrating with the electric salinity of the Albariza soil.

04 — THE INTERVIEW

Manuel Jiménez — The method to the madness

TC: Why the obsession with single plots in a land of blends?

MJ: In Montilla, identity was lost in the cooperative tanks. Los Insensatos is an archaeological project. We wanted to see if La Manga tasted different from El Pretil. Spoiler: It does. One is muscle and sea spray; the other is verticality and lightning.

TC: You use minimal sulfur. Is this ‘natural’ wine?

MJ: We prefer ‘honest wine’. We use the velo de flor as a biological shield. If you have healthy grapes and the right pH from the Albariza, you don’t need a chemistry set.

TC: How does the Albariza handle the ‘new’ climate reality?

MJ: The Albariza is our life insurance. While other regions see their vines shut down from hydric stress, our ‘white sponge’ keeps the deep roots hydrated. The challenge isn’t the heat; it’s keeping that 15% from turning into weight. We want precision, not fire.

TC: What is the most ‘insane’ thing you’ve done in the cellar?

MJ: Deciding to bottle ‘El Barco’ separately. People told us it was too challenging. But we aren’t making wine for the average palate. We are making wine for the curious, the brave, and the slightly thirsty.

TC: Is Montilla finally escaping the shadow of Jerez?

MJ: We aren’t trying to be Jerez. We are inland, higher altitude, more continental. We are the mountain of the South.
